Cranberry Sauce

Fresh cranberries, orange zest, cinnamon sticks, and fresh ground black pepper make this an delicious alternative to the canned sauce.

Serves 8

Ingredients:

12 wt oz              Fresh Cranberries, rinsed and drained

¾ cup                  Sugar

¾ - 1 cup             Fresh Orange Juice, squeezed from 2 oranges

2-3 TBL              Orange Zest, from 2 oranges

2 each                 Cinnamon Sticks

¼ tsp                   Kosher Salt

½ tsp                   Black Pepper, fresh ground

 

Method:

1.       Place cranberries, sugar, and juice in a 10-inch sauté pan and heat over medium high to a boil.

2.       Reduce heat to low and add zest and cinnamon sticks.

3.       Simmer for 10 minutes, stirring occasionally.

4.       Turn off heat and remove the cinnamon sticks.

5.       Add salt and pepper and stir.

6.       Allow to cool to room temp and serve.
