Orange Bruleed
French Toast
Ingredients
Yields 4 servings
4 each Eggs
½ cup Heavy Cream
¼ cup Milk
2 TBL Brown Sugar
1 tsp Vanilla Extract
¼ tsp Kosher Salt
1 each Orange, Zested and Juiced
1 TBL Grand Marnier (optional)
12 each Brioche Bread, ½ inch sliced
Unsalted Butter
Maple Syrup
2 cups Whipped Cream
Mint Chiffonade
Method
Mix eggs, cream, milk, brown sugar, vanilla, salt, in a mixing bowl and beat with a wire whip.
Zest orange and fine chop zest, then juice the orange and add both to the egg mixture. Add Grand Marnier.
Melt butter in a Teflon pan over medium heat. Dip bread into the egg mixture coating both sides. Do not leave it in the mixture too long or it will become soggy.
Cook bread until browned on both sides. Then transfer to a sheet tray.
Sprinkle 1 tsp of sugar on top of each piece of toast. Use a torch to brulee the sugar. Heat it enough so that it starts to bubble and brown. But not enough to turn black.
Place three pieces of French toast on a plate. Drizzle with syrup.
Add whipped cream and mint chiffonade.
