Chimichurri

Ingredients

Yields 4 servings

  • 1/3 cup parsley (chopped)

  • ½ TBL garlic (minced)

  • 2 TBL oregano (fresh)

  • ¼ tsp crushed red pepper

  • ¼ tsp cumin

  • ½ tsp kosher salt

  • 2 ½ TBL white wine vinegar

  • 5 TBL extra virgin olive oil

Method

  1. Place all ingredients except the olive oil in a food processor and fine chop (or chop by hand). Drizzle in olive oil while mixing with a wire whip. Allow at least 30 minutes for flavors to meld and serve room temp.
