Chimichurri
Ingredients
Yields 4 servings
1/3 cup parsley (chopped)
½ TBL garlic (minced)
2 TBL oregano (fresh)
¼ tsp crushed red pepper
¼ tsp cumin
½ tsp kosher salt
2 ½ TBL white wine vinegar
5 TBL extra virgin olive oil
Method
Place all ingredients except the olive oil in a food processor and fine chop (or chop by hand). Drizzle in olive oil while mixing with a wire whip. Allow at least 30 minutes for flavors to meld and serve room temp.
